Walnut Crust
During the holidays I was determined to find a diabetic-friendly alternative for desserts. This one is easy to make and with the walnuts used for the crust and a little sugar substitute I've found this doesn't jack up my hubby's blood sugar.
3/4 cup crushed walnuts
2 tsp sugar substitute - you can find this made for cooking in the baking aisle
3 tbsp butter
Preheat oven to 350 degrees.
Just add the walnuts, butter and sugar substitute to a food processor. Process just until combined, a few pulses should do it.
Butter a pie dish, this helps keep the walnut crust from sticking.
Press the prepared walnuts mixture into the pie dish along the bottom and up onto the edges. I use my finger for this, it's a bit messier but gets the job done easier for me.
Bake the crust for 10 minutes.
Fill with whatever pie filling you choose. I made a sugar free chocolate pudding pie and it was delicious. After chilling in the refrigerator for a few hours the crust cut easily and it was delicious!
