BLT and Avocado Salad

If I had to pick a favorite sandwich it would definitely be the BLT. I could use low-cal bread and just go with it, but since we're trying to eat healthier and more diabetic-friendly, I've taken those ingredients and added them to a delicious salad. Adding avocado to this salad can be especially beneficial in controlling blood sugar levels due to its high unsaturated fat and high fiber contents and my redneck and I just love them!


Romaine lettuce
1 Avocado
2 Roma Tomatoes
2 pieces of cooked bacon
Mayonaise - you can use low-fat if you want


You just dice up the tomatoes and add about a tablespoon of mayo. Mix them well and set aside for a few minutes for the juice of the tomatoes and the mayo to come together.
Chop the romaine lettuce and place into a bowl. Add the tomato/mayo mixture and mix well.
Top with chopped avocado and chopped bacon.

Delicious!!!
