Healthy-ish Pizza

This isn't one I actually made, I just pick up one of those cooks at home pizzas. In order to keep it somewhat diabetic-friendly, I get the thinnest crust available and go very light on the red sauce to control the added sugar. I add some veggies and a little green onion and it's just fabulous. And, even better, it doesn't blow up my hubby's blood sugar.

Walnut Crust

During the holidays I was determined to find a diabetic-friendly alternative for desserts. This one is easy to make and with the walnuts used for the crust and a little sugar substitute I've found this doesn't jack up my hubby's blood sugar. 3/4 cup crushed walnuts 2 tsp sugar substitute - you can find this made for cooking in the baking aisle 3 tbsp butter Preheat oven to 350 degrees. Just add the walnuts, butter and sugar substitute to a food processor. Process just until combined, a few pulses should do it. Butter a pie dish, this helps keep the walnut crust from sticking. Press the prepared walnuts mixture into the pie dish along the bottom and up onto the edges. I use my finger for this, it's a bit messier but gets the job done easier for me. Bake the crust for 10 minutes. Fill with whatever pie filling you choose. I made a sugar free chocolate pudding pie and it was delicious. After chilling in the refrigerator for a few hours the crust cut easily and it was delicious!
It's been several years since I last posted. Life happens, you know? Now, I'm in a position to share more recipes! I won't be telling you all about my family members and how much they loved the dish, yada yada yada. Personally, I hate to have to scroll and scroll just to get to the recipe. These are super informal, just what I make at home and they're a little bit healthier and tailored for a diabetic. Hope you enjoy!
