Flourless Chocolate Banana Cake
I'm always looking for low sugar desserts that I can make for me and my husband. I don't feel that being diabetic should mean always eating tasteless foods and skipping dessserts! I've seen variations of this recipe online and thought why not try it.
Flourless Chocolate Banana Cake
1 banana mashed up, 1 egg, 1 cup oatmeal, two tablespoons unsweetened cocoa powder, 1 1/2 cups coconut milk.
I mixed the ingredients in my NutriBullet and poured it into a couple little crocks. Bake at 350 degrees for 50 minutes, top with a few chocolate chips and bake for an additonal 10 minutes.

BLT and Avocado Salad
If I had to pick a favorite sandwich it would definitely be the BLT. I could use low-cal bread and just go with it, but since we're trying to eat healthier and more diabetic-friendly, I've taken those ingredients and added them to a delicious salad. Adding avocado to this salad can be especially beneficial in controlling blood sugar levels due to its high unsaturated fat and high fiber contents and my redneck and I just love them!
Romaine lettuce
1 Avocado
2 Roma Tomatoes
2 pieces of cooked bacon
Mayonaise - you can use low-fat if you want
You just dice up the tomatoes and add about a tablespoon of mayo. Mix them well and set aside for a few minutes for the juice of the tomatoes and the mayo to come together.
Chop the romaine lettuce and place into a bowl. Add the tomato/mayo mixture and mix well.
Top with chopped avocado and chopped bacon.
Delicious!!!

Healthy-ish Pizza
This isn't one I actually made, I just pick up one of those cooks at home pizzas. In order to keep it somewhat diabetic-friendly, I get the thinnest crust available and go very light on the red sauce to control the added sugar. I add some veggies and a little green onion and it's just fabulous. And, even better, it doesn't blow up my hubby's blood sugar.
